RECIPE INSTRUCTIONS

  1. In a small saucepan, sprinkle the gelatin over ½ cup of the coconut milk. Let sit and “bloom” for 5 minutes.

  2. Add the rest of the coconut milk and over low heat, whisk until the gelatin is fully dissolved.

  3. Add the collagen, monk fruit powder, cacao, and vanilla extract and whisk to incorporate.

  4. Cook over low heat, stirring periodically, for ten minutes.

  5. Optional: Use an immersion blender or blender and blend for 10-15 seconds for extra creaminess. If you ever find that the panna cotta separates in the fridge, don’t skip this step–or if it does separate on you, give it a blend and then let it reset!

  6. Pour mixture into four ramekins or small bowls. Let set in the refrigerator for four hours or overnight.

  7. Add desired toppings and serve.
