Keto Coconut Milk Chocolate Panna Cotta Recipe
These creamy, rich, chocolate panna cottas are absolutely heavenly. With just six wholesome ingredients like coconut milk and gelatin, you’ll be amazed how simple and easy they are to make. We added collagen for a protein boost, plus it’s so good for gut health and vibrant skin. You might top these with coconut whipped cream and berries or try some fresh mint!

RECIPE INGREDIENTS
1 can (13.5 fl oz) Coconut Milk – We love Native Forest Simple Organic Coconut Milk
1 ½ teaspoons Gelatin – Great Lakes Wellness Beef Gelatin is grass-fed, gluten-free and high quality
¼ cup Collagen – Try Vital Proteins Collagen Peptides
½ teaspoon Monk Fruit Powder – We like TEAki Hut because it’s organic and doesn’t have additives
2 Tablespoons Cacao – Navitas Organics Cacao is our go-to
2 teaspoons Vanilla Bean Paste – Simply Organic makes an amazing Vanilla Bean Paste
RECIPE INSTRUCTIONS
In a small saucepan, sprinkle the gelatin over ½ cup of the coconut milk. Let sit and “bloom” for 5 minutes.
Add the rest of the coconut milk and over low heat, whisk until the gelatin is fully dissolved.
Add the collagen, monk fruit powder, cacao, and vanilla extract and whisk to incorporate.
Cook over low heat, stirring periodically, for ten minutes.
Optional: Use an immersion blender or blender and blend for 10-15 seconds for extra creaminess. If you ever find that the panna cotta separates in the fridge, don’t skip this step–or if it does separate on you, give it a blend and then let it reset!
Pour mixture into four ramekins or small bowls. Let set in the refrigerator for four hours or overnight.
Add desired toppings and serve.
